LEMON BARS
🌟 INGREDIENTS
For the crust:
- 1 and 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
For the filling:
- 4 large eggs, at room temperature
- 1 and 1/3 cups granulated sugar
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1 tablespoon grated lemon zest (about 2 lemons)
- 1/4 cup all-purpose flour
- Powdered sugar, for dusting
🌟 INSTRUCTIONS:
Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish with cooking spray or butter. Set aside.
In a medium bowl, whisk together flour and powdered sugar until well combined. Add cold butter and use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
Press the mixture evenly into the bottom of the prepared baking dish. Bake for 20 minutes or until lightly golden brown around the edges. Remove from oven and set aside.
In a large bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and flour until well combined. Pour the mixture over the baked crust.
Bake for an additional 20-25 minutes or until the filling is set around the edges but still slightly jiggly in the center.
Allow bars to cool in the pan on a wire rack for at least 1 hour before cutting into squares and dusting with powdered sugar before serving.
