Christmas Vanilla Roll Cake
Ingredients:
4 eggs
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup powdered sugar (for rolling)
1 cup heavy cream
1/2 teaspoon vanilla extract (for filling)
1/4 cup powdered sugar (for filling)
Directions:
Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
In a large bowl, beat eggs for 5 minutes until thick and lemon-colored. Gradually add sugar, beating well.
In a separate bowl, sift together flour, baking powder, and salt. Fold into egg mixture. Stir in vanilla extract.
Dust a clean towel with powdered sugar. Turn cake out onto towel immediately after baking. Roll up cake and towel together, starting from the narrow end. Cool on a wire rack.
For filling, whip heavy cream until it begins to thicken. Add vanilla extract and powdered sugar, continue whipping until stiff peaks form.
Unroll cake and remove towel. Spread filling evenly over cake, then re-roll without the towel. Chill before serving.
