Ingredients:
• 2 cups graham cracker crumbs
• 1/2 cup unsalted butter, melted
• 24 oz cream cheese, softened
• 1 cup granulated sugar
• 1 cup creamy peanut butter
• 1 tsp vanilla extract
• 4 large eggs
• 1 cup heavy cream
For the Chocolate Ganache:
• 1 cup semisweet chocolate chips
• 1/2 cup heavy cream
Directions:
. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
. In a large mixing bowl, beat cream cheese until smooth. Add sugar, peanut butter, and vanilla extract, continuing to beat until well combined.
. Add eggs one at a time, beating well after each addition. Pour in the heavy cream and mix until the batter is smooth.
. Pour the batter over the crust and smooth the top. Bake for 50-60 minutes or until the center is set.
. Allow the cheesecake to cool in the pan, then refrigerate for at least 4 hours or overnight.
For the Chocolate Ganache:
. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the chocolate chips. Let it sit for a minute, then stir until smooth.
