Honey Lavender Cheesecake

 This Honey Lavender Cheesecake combines the light floral notes of lavender with the sweetness of honey creating a unique and aromatic dessert perfect for any occasion.
Ingredients
For the Crust
1 34 cups graham cracker crumbs 
4 tablespoons melted butter 
For the Filling
2 pounds cream cheese room temperature 
1 13 cups sugar 
4 eggs 
1 tablespoon vanilla extract 
12 teaspoon lavender extract 
1 12 tablespoons honey 
14 teaspoon salt 
23 cup sour cream 
23 cup heavy whipping cream 
Violet food coloring optional 
For the Topping
1 cup sour cream 
2 tablespoons powdered sugar 
1 tablespoon honey 
12 teaspoon vanilla extract 
Instructions
1 Preheat the oven to 350F 175C.
Combine graham cracker crumbs with melted butter and press the mixture into the bottom of a greased 9inch springform pan. Bake for 1215 minutes and let cool.
2 Prepare the filling
Reduce the oven temperature to 325F 163C. Beat cream cheese until fluffy. Gradually add sugar then mix in vanilla extract lavender extract honey and salt. Add eggs one by one then mix in sour cream and heavy cream. Add violet food coloring if desired.
3 Bake the cheesecake
Wrap the outside of the pan in foil. Pour the filling into the crust smooth the top and bake in a water
bath for 90 minutes. Let the cheesecake cool in the oven with the door slightly open for 1 hour.
4 Make the topping
Mix sour cream powdered sugar honey and vanilla extract. Spread the topping over the cooled cheesecake.
5 Chill Serve
Refrigerate the cheesecake until ready to serve. Enjoy the subtle floral taste of lavender combined with rich cheesecake goodness!
