Ingredients

1 cup dark brown sugar
1 cup white sugar
2/3 cup vegetable or canola oil
1/2 cup unsweetened applesauce
3 eggs
15 oz can pure pumpkin
1 tsp vanilla extract
5 tsp pumpkin pie spice
1 tsp ground cinnamon
1/2 tsp ground cloves
3 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2-1 cup cinnamon chips
For the Pecan Streusel:
3/4 cup pecans, divided
1/2 cup dark brown sugar
6 tbsp flour
1/2 tsp ground cinnamon
4 tbsp cold butter
Instructions
Preheat Oven: Set to 400ยฐF (200ยฐC) and prep muffin tins with grease or paper liners.
Mix Wet Ingredients: In a large bowl, beat together dark brown sugar, white sugar, oil, and applesauce until smooth.
Add Eggs & Pumpkin: Beat in eggs one at a time, then mix in pumpkin and vanilla extract.
Add Spices: Mix in pumpkin pie spice, cinnamon, and ground cloves.
Prepare Dry Ingredients: In a separate bowl, whisk flour, baking soda, baking powder, and salt.
Combine & Add Chips: Gradually fold the dry ingredients into the wet mixture and mix until just combined. Stir in cinnamon chips.
Make Streusel: Pulse pecans, dark brown sugar, flour, and cinnamon in a food processor. Add butter and pulse until crumbly.
Assemble Muffins: Fill muffin tins 2/3 full with batter. Sprinkle streusel on top and add extra pecans if desired.
Bake: Bake at 400ยฐF for 5 minutes, then lower to 350ยฐF and bake for an additional 20 minutes, until a toothpick comes out clean.
