Mini Oreo Cheesecakes 🖤🍰

These no-bake Mini Oreo Cheesecakes are perfect for cookies and cream lovers! Featuring an Oreo cookie crust, creamy Oreo cheesecake filling, decadent chocolate ganache, and a topping of whipped cream and mini Oreos, these bite-sized treats are delightful.

Oreo Cookie Crust:

2 cups Oreo cookie crumbs 🍪
2 tbsp granulated sugar 🍬
6 tbsp salted butter, melted 🧈
Oreo Cheesecake Filling:

16 oz cream cheese, room temperature 🧀
1 ¼ cups powdered sugar 🍬
2 tsp vanilla extract 🌼
1 ¼ cups heavy cream 🍶
1 cup chopped Oreo cookies 🍪
Chocolate Ganache:

½ cup semisweet chocolate chips 🍫
¼ cup heavy cream 🍶
Whipped Cream:

¾ cup heavy cream 🍶
2 tbsp powdered sugar 🍬
½ tsp vanilla extract 🌼
Additional Ingredients:

2 tbsp Oreo cookie crumbs 🍪
24 mini Oreo cookies 🍪

Step 1: Prepare the Oreo Cookie Crust
1️⃣ In a bowl, combine Oreo cookie crumbs, granulated sugar, and melted butter.
2️⃣ Press about 1 tablespoon of the mixture into mini cheesecake pans to form the crust. Set aside.

Step 2: Make the Cheesecake Filling
3️⃣ Use an electric hand mixer to cream the room temperature cream cheese, powdered sugar, and vanilla extract until smooth.
4️⃣ Slowly add the heavy cream, whipping until the mixture thickens and becomes fluffy.
5️⃣ Gently fold in chopped Oreo cookies.
6️⃣ Pipe the cheesecake mixture onto the Oreo crusts using a piping bag, filling slightly above the pan.
7️⃣ Chill the cheesecakes in the refrigerator for at least 12 hours or overnight.

Step 3: Prepare the Chocolate Ganache
8️⃣ Microwave semisweet chocolate chips and heavy cream in 15-second intervals, stirring in between, until smooth. Set aside to cool slightly.

Step 4: Whip the Cream
9️⃣ In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until medium-stiff peaks form. Fill a piping bag fitted with a Wilton 1M tip.

Step 5: Assemble the Mini Cheesecakes
🔟 After chilling, remove cheesecakes from the pan.

1️⃣2️⃣ Pipe a swirl of whipped cream over the ganache.
