Chocolate mousse cake
CHOCOLATE MOUSSE CAKE 😋
Ingredients:
For the base
150 g of cookies
2 tablespoons of cocoa powder
50 ml of orange, cinnamon, acorn liqueur... to your taste
60 g of hazelnuts or walnuts, peeled and chopped very small
60 g soft unsalted butter (you can melt it a little in the microwave)
For the mousse
200 g of milk chocolate (or dark if you prefer) in a tablet
100 g of sugar
400 ml of special whipping cream
3 egg whites
6 sheets of gelatin (or a 16 g sachet)
Preparation:
1.Mash the cookies in the mixer until they are reduced to flour. Mix very well with the cocoa, butter and nuts of your choice very chopped. In the photo they are hazelnuts crushed also in the mixer very tiny but not completely reduced to flour so that they provide a crispy point.
2.In a removable mold we put a base with this mixture and press it very well. We keep it in the fridge to compact.
3.We hydrate the gelatin in water for 10 minutes. If you use gelatin from the envelope you will have to dilute it in very little hot water and add it at the right time.
4.Mix the cream with half of the sugar and the whites with the other half of the sugar. Melt the chocolate in a double boiler with the liquor. Mix it very well with the gelatin until it is perfectly dissolved and integrated.
5.Mix the chocolate with the whites mounted with enveloping movements. We also add the cream. Mix very well to make it creamy and without air bubbles.
6.Carefully put the mixture on the cookie base, flatten the surface very well with a spatula and let it cool for a few hours in the fridge to set and compact.
