red velvet cupcakes
Made these lovely red velvet cupcakes to sell in school today ❤️
2 cups flour
½ teaspoon salt
1 cup sugar
1 teaspoon bicarbonate of soda
1 cup oil
1 teaspoon vanilla essence
1 tablespoon vinegar
20g cocoa powder
1 cup maas/amasi /buttermilk
5 teaspoons red food coloring
2 eggs
Cream cheese frosting
¾ cup butter
200g cream cheese
300g icing sugar
Method
Preheat your oven to 160C. Sift your dry ingredients. Mix your wet ingredients in a separate bowl. Add your wet ingredients to your dry ingredients. Combine the wet and dry ingredients (do not overmix) . Pour into your muffin cups and bake for 20 minutes.
Cream cheese icing
Whip your butter until fluffy. Add in your icing sugar and whip for 5 minutes now add in your cream cheese and whip until smooth
