How to Store Apple Butter Cake
This cake can be stored in an airtight container in the refrigerator for up to 4 days.
This cake will freeze nicely but if you have frosted it it will not be pretty. I recommend freezing the individual layers by wrapping them in plastic wrap and then placing them in a freezersafe sealable plastic bag. It should last up to 3 months in the freezer. When you are ready to assemble the cake remove it from the freezer and allow it to sit out for about 30 minutes and then frost.

1 cup 2 sticks 227 g unsalted butter melted1 cup 245 g whole milk room temperature½ cup 125 g apple butter1 cup 200 g granulated sugar1 cup 200 g light brown sugar packed2 large eggs room temperature1 teaspoon vanilla extract2 cups 250 g allpurpose flour1 teaspoon baking soda1 teaspoon apple pie spice
Frosting
½ cup 1 stick 113 g unsalted butter softened to room temperature4 cups 500 g confectioners sugar1 teaspoon vanilla extract¼ teaspoon ground cinnamon¼ cup 60 g apple cider
Instructions
Cake
Preheat the oven to 350F. Spray two 8inch round pans with nonstick cooking spray and line each with parchment paper.
In a large bowl whisk together butter milk apple butter granulated sugar and brown sugar.
Blend in eggs and vanilla until smooth.
Add flour baking soda and apple pie spice. Whisk until blended.
Pour batter evenly into prepared round pans. Bake 16 minutes. The cakes are done when a clean toothpick is inserted and comes out with crumbs but no wet batter. The tops should also be springy. Every oven is different so keep an eye on them.
Remove from the oven and let cool as you make the frosting.
Frosting
In the bowl of a stand mixer or using a hand mixer whip butter until soft.
Add in confectioners sugar vanilla cinnamon and apple cider. Whip until fully combined and smooth.
Frost the cooled cake and serve.
