Peach Cobbler Cupcakes
These Peach Cobbler Cupcakes are a delightful twist on classic peach cobbler combining vanilla cupcakes with creamy vanilla frosting peach pie filling and a crunchy crumble topping. Perfect for any dessert occasion these cupcakes are sure to impress!
Ingredients
For the Cupcakes
1 box vanilla cake mix
1 cup water
⅓ cup unsalted butter softened
3 large eggs
For the Vanilla Frosting
2 cups unsalted butter softened
4 ½ cups powdered sugar
2 teaspoons vanilla extract
3 tablespoons heavy whipping cream you may need up to 3 more tablespoons
For the Peach Topping
21 ounces peach pie filling storebought or homemade
For the Crumble Topping
½ cup light brown sugar
½ cup granulated sugar
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
1 ¾ cup allpurpose flour
Instructions
1. Prepare the Cupcakes
Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners.
In a large mixing bowl beat together the vanilla cake mix water softened butter and eggs until well combined.
Scoop the batter into the cupcake liners filling each about ⅔ full.
Bake in the preheated oven for 19 minutes or until the cupcakes are a light golden brown and a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely on a wire rack.
2. Make the Vanilla Frosting
In a stand mixer beat together the softened butter powdered sugar heavy whipping cream and vanilla extract until the frosting is smooth and stiff with peaks.
Scoop the frosting into a piping bag fitted with a star tip.
3. Prepare the Crumble Topping
Preheat your oven to 350F 175C.
